cauliflower cheese....our way!
cheese, cream, salty bacon (and a bit of veg!)....pure comfort!
last night was our version (the fatties version) for cauliflower cheese. i don't use a recipe and just guess the weights, depending on how many people are eating with us, but i always to do the same method with the same ingredients; cauliflower florets, broccoli florets, sliced potatoes (10mm in thickness), bacon lardons, sliced red onion, sliced mushrooms, garlic, double cream, a few sprigs of thyme, a few scrapes of grated nutmeg, grated gruyere cheese and salt and pepper!
method: preheat oven to 200°C/180°C fan. in a pan i fry the bacon for a while until it starts to crisp up, then add the onions and fry for a couple of minutes before adding the garlic and mushrooms. i then add the thyme and a bit of salt (bacon is already salty) and pepper, and then let it cook for a while until the mushrooms have browned.
whilst the bits are fry in a pan, i par-boil the potatoes for a while (about 5 mins) and then add the broccoli and cauliflower florets for a couple of minutes and then drain.
once all is ready i then get an oven dish and put a layer of potatoes, cauliflower and broccoli topped with the bacon, mushroom and onion mixture. this is then cover with a tablespoon or two of double cream and some grated nutmeg and some gruyere. i repeat the layering once more, but add a touch more cheese to the top to make sure that it goes really crispy! i pop this in the oven for 30 minutes and then gobbled it all up as soon as it comes out!
this meal is the one that chris and i were really worried about only eating once....it is lush! it is not too dissimilar to the tartiflette that i cooked in january but for me it is a lot more scrumptious! it is of course naughty but i console myself with the fact that it has both cauliflower and broccoli!
the best thing about dinner last night....there is enough left over for lunch!
