salmon with leeks and parsnip mash
from start to plate : 30 minutes
good for : healthy grub!
mr taylor decided on this dish and cooked it last night....
this was one of those real surprise dishes. we're no strangers to salmon fillets, parsnips or leeks, however the combination of ingredients, and the infused flavours, made this a real treat. the salmon is coated in lemon juice, zest and thyme which permeated into the fish flesh whilst in the oven. the sweetness of the parsnip mash made it truly stand out from regular potato mash...elevating the dish to lofty heights, a technique we'll definitely utilise again in other dishes.
i also had an impromptu 'ready steady cook' moment and decided instead of throwing the parsnip skins away i used them with a little seasoning and created some beautiful parsnip crisps. this made for a tasty and decorative topping for the relatively flat dish appearance.
is it worth waiting for?
this was superb, and i can't recommend it highly enough. due to the relatively short prep and cooking time, this dish is quick to make but leaves a truly lasting impression.
