greek spinach and feta pie
from start to plate : 55 minutes
good for : summer flashback!
what is the best way to get rid of those winter blues? serve summer on a plate of course!
we are not the kind of people who have to stick to their 'rules' of stews in the winter, salads in summer and roasts on a sunday....we like to have whatever we fancy, whenever we want it, and are very much driven by emotion....this pie makes us feel good! it is from good food and is our favourite way of using the wonderful combination of spinach and feta.
i follow the recipe as is, although i do add chopped sundried tomato to the pie as this gives a depth to the flavour and whilst eating, it is a joy to come across the succulent, fruity and sweet morsels. the filo pastry gives the pie a light and crispy topping, and to give it added character i use the the oil from the sundried tomatoes to coat the pastry in between layers and to finish it on top.
i made our favourite side dish of tzatziki, and although we could have served the pie with potatoes, we were really after a taste of summer so instead i made some cous cous with cucumber, red onion, tomatoes, lemon and seasoning.
as it is obviously clear, we love this pie and so does everyone that we have cooked it for, whether it's served in this way, on it's own at a picnic, or in your lunch box the next day!
