aromatic crispy duck pancakes
from start to plate : 3 hours
good for : lazy saturdays, social eating
at first it seemed strange that this three hour recipe for aromatic crispy duck pancakes was found in the nigella express book! however on closer inspection of the instructions, the reason for its inclusion within the book became clear. all the recipe entails is to season the duck and cook on a low 170 degree heat in the oven until its ready. easy.
it looked like there wouldn't be enough to fill us up (!) so i decided to make some vegetable spring rolls to go along side the duck; this, as it turned out, was quite unnecessary! last week i had taught a group of 14 year olds how to make spring rolls (and wontons and samosas) so i thought i would impress chris with my new found skills.
they are so very easy to make; in a wok, fry up some, garlic, ginger, grated carrot, onions, bean sprouts, peppers etc (basically any veg you have. you can add meat to if you wish) and then place onto a sheet of filo and roll up into a 'cigar' shape (it's a tad too difficult to describe....youtube it!). these are then coated with oil and cooked in the oven at 200°C (fan) for 15 minutes.
is it worth waiting for?
another example of a dish we're going to find hard not to eat for a year! this was gorgeous and would be perfect for large groups of guests.
