spiced red lentil soup
from start to plate : 30 minutes
good for : good use of leftovers
one thing we hate is waste! so....after being left with some thai red curry paste and coconut milk from the red duck curry on friday, we wanted to include them in another recipe and found one for spiced red lentil soup in my cookbook of cut outs!
there is not much to say regarding the ingredients and method; quick and easy (especially as you don't have to soak red lentils). however, if you are after a hot and spicy soup, i would suggest adding a touch more chilli powder/flakes. for us, it was perfect; it had a gentle but flavoursome taste and went great with a side of naan!
is it worth waiting for?
absolutely....and it's cheap too!
